Low fat Blueberry muffins

3 cups whole wheat flour3/4 cup sugar3/4 cup packed brown sugar1 teaspoon salt4 teaspoons baking powder2/3 cup applesauce2 eggs2/3 cup skim milk3 cups fresh blueberries
1. Preheat oven to 400 degrees and grease muffin cups or line with muffin liners.
2. Combine flour, all sugar, salt, and baking powder.
3. Place 1/3 cup applesauce into a 1 cup measuring cup; add the egg and enough milk to fill the cup (about 1/3 cup). Put this into flour mixture and do it again (twice to get 2/3 cup of applesauce and milk and 2 eggs).
4. Mix together but be careful to not stir too much!
5. Fold in blueberries and fill muffins almost to the top.
6. Bake for 20-25 minutes.
Should yield 21 muffins. Remember to put water in any extra muffin cups that don't have batter so everything cooks evenly. :)
