Lowfat Gluten-Free Banana Muffins

Ingredients
1/2 cup brown rice flour1/2 cup potato flour1 TB baking powder1/2 tsp baking soda1/8 tsp salt1 cup mashed bananas1/4 cup honey1 large egg1/2 tsp vanilla extract1/4 cup applesauce1/4 cup walnuts
Directions
Preheat oven to 350 degrees F. Grease muffin pan or line with paper liners.

In medium bowl, combine flour, baking powder, baking soda and salt.

In separate bowl, combine banana, sugar, egg, and vanilla extract. Blend well. Add applesauce. Slowly combine dry mixture to banana mixture. Blend well.

Scoop batter into prepared muffin cups. Bake 15-20 minutes or until a toothpick inserted in the center of the muffin comes out clean. Let cool before serving.
