Pumpkin Muffins

Ingredients
One box of yellow cake mix(you can purchase any type of cake mix, but I prefer yellow)One can of pumpkin pie fillingSeason with your choice of pumpkin pie spice, cinnamon, nutmeg or all spice.
Directions
Mix cake mix only and pumpkin on medium until smooth. (you only use the cake mix - nothing else that is listed on the cake mix instructions)

Add your preference of seasoning

Spoon into muffin tin and bake at 350 for 50 - 60 minutes.
(I use the mini muffin tins which usually makes 36 - 40 mini muffins) I figure three mini muffins = one regular muffin.

My kids love these and they are healthy! Very moist and a great source of protien!

    I use te16 oz can of pumpkin pie filling. :)

    I buy the spice cake mix and add pumpkin to it. NUMMY! Then you don't need to add any of the other spices. - 6/30/09
