Ingredients
1 lb bag of lentils prepared as instructed and rinsed.1 small can mandarin oranges1 half red onion finely chopped2 cloves garlic finely chopped8-10 baby carrots finely chopped or grated 1/4 cup extra virgin olive oilteaspoon of saltteaspoon cuminhalf teaspoon of black pepper1 tablespoon finely chopped mint if i have it on hand.
Directions
gently mix all ingredients I add the mandarins last as they are easily damaged.
