Tofu Stirfry!

Ingredients
Tofu (or chicken if you prefer)BroccoliCarrotsZucchiniTomatoesSoy SauceGarlic ClovesLemon
Directions
Frist being by chopping all your ingredients:

Extra Firm tofu, use half the block and chop into small cubes
Broccoli, cut of stems and allow for one cup and mini trees
Zucchini, slice
Tomatoes, chop
Garlic, mash, grate and/or grind so it easily blends for flavor
Lemon, cut in half in order to squeeze for juice

I generally use two pans so the tofu cooks thouroughly. in one small sauce pan add soy sauce and lemon juice, once hot add tofu and cook until all sides are brown to your liking, usually about 10 mins.
In a second pan add soy sauce, lemon juice and garlic, once hott add veggies, cover and stir occasionally until veggies are tender and cooked. about 10-15mins.
combine the two and serve!

You can also serve over rice or noodles for extra carbs and its even more delicious!
