Preheat oven @ 350Grease and flour 9x13 pan2c whole wheat flour1c sugar1c sugar subCombine sugar and flour in large bowl1 1/2 c mini marshmallows1c lemon-lime soda1/2c unsweetened applesauceCombine marshmallows and soda in a sauce pan. Heat until marshmallows are melted and mixture is boiling. Add applesauce and stir. Fold this mixture into the flour and sugar mixture.In a separate bowl add 2 beaten eggs, 1 tsp baking soda, 1/3c fat-free sour cream, and 1/2c of milk-mix until thoroughly blended. Add lemon peel and lime peel and juice. Gently fold this mixture into the large bowl until batter is mixed. Add batter to a greased and floured 9x13in pan and bake for 25-35 minutes using a cake test to see if done.In a saucepan heat up 3/4 stick of margarine, 6 tablespoons of lemon-lime soda, 2tsp lemon peel, lime juice and peel until boiling. Stir in powdered sugar until thoroughly incorporated. use this glaze* over the warm cake.*There will be quite a bit of extra glaze that will not be used so nutritional values will be lower if less glaze is used--I used this amount to glaze 2 cakes
makes 16 servings try adding blueberries to the glaze for a lemon-blueberry combo!
