4 Cups Chicken Broth, 99% Fat Free4 Cups Water8 oz Shrimp, Small Bay1 Cup Tofu, soft1 Egg White1 Tbsp Corn Starch1 Tbsp Scallions (green oinions)
1. Bring Chicken Broth and water to a boil and then turn down to light boil.
2. Cut Tofu into equal sized small cubes & add to Broth.
3. Add Small Bay Shrimp.
4. Lightly beat Egg White and slowly add to soup.
5. Mix Corn Starch with 2 tablespoons of water. Then add slowly to the simmering soup until desired thickness is obtained.
Serve in small bowls and garnish with chopped oinions.
