Armenian Bean Salad

Ingredients
1/3 cup Fresh Squeezed lemon juice2 Tbsp. Olive Oil1/2 tsp salt1/2 tsp fresh ground black pepper1/2 tsp ground paprika1/4 tsp red pepper1 can dark red kidney beans, drained and rinsed1 can cannellini beans, drained and rinsed3/4 cup chopped red onion12 oz red cherry tomatos, quartered1/2 cup fresh chopped parsley
Directions
Mix together first 6 ingredients, stir well. Lightly pat excess water off of beans after rinsing. Add beans and rest of ingredients and blend.

Makes about 5 servings.

    The ease and flavors of this recipe make it absolutely one of the BEST we've tried. I used cayenne as I was out of red pepper and packaged lemon juice instead of fresh. YUM!! Actual portion size is closer to 3/4 (.75) cup per person best as I can tell. - 7/3/13
