Rhubarb Cobbler

Ingredients
Base:4 c fresh, chopped rhubarb3/4 c sugar1/3 c Bisquick Heart SmartTopping:3/4 c Bisquick Heart Smart2/3 c sugar1 med egg1/4 c melted butter
Directions
Combine sugar and Bisquick. Add rhubarb. Toss lightly. Set aside.

Combine Bisquick and sugar. Stir in beaten egg making coarse crumbs.

In 9 x 9 pan, layer base, then topping. Pour melted butter over top. Bake at 375 for 35 minutes. Makes 16 squares, alittle bigger than 2" each.

I have doubled the recipe and baked it in a 10 x 13 for 40 - 45 minutes.
