Fava Bean Succotash

Ingredients
2 Tbsp Olive Oil 1 Med Onion, chopped 4 Med raw potatoes, peeled and dicedbag of sweet corn (about 12 oz)bag of dried fava beans (soaked, peeled, and cooked for 1 hour in lots of fresh water)
Directions
Makes 8 1 cup servings

saute diced potatoes in 1 Tbsp of olive oil for 20 minutes or so. add 1 Tbsp of olive oil and onions and sautee for a few more minutes. Add fava beansand cook for a few more minutes. Add corn and one cup of water. Cover and let cook down for a few minutes. Stir. Season with salt and pepper to taste.
