Veggie Bread Pudding

Ingredients
3 slices herb-cheese bread1 zucchini, chopped2-3cups cooked vegetables1 egg4 tbsp egg whites only1/2c skim milk1/2c no fat cottage cheese1/2c cheddar cheese (the extra cheese above is to count for the cheese bread)
Directions
1. Mix egg whites/egg & milk
2. Cube bread
3. In large bowl mix bread and veggies thoroughly
4. Put half mixutre into sprayed baking dish
5. Layer cottage cheese on top. Add remaining bread/veggie mixture
6. Pour milk/egg mixture over the bowl pressing down so bread soaks up the liquid
7. Sprinkle the cheddar cheese over top
8. Bake at 350 for 35-40minutes or until a knife comes out clean.
