Tuscany Tuna Salad with White Beans

Ingredients
1 7 oz can of water packed tuna, drained and flaked4 scallions, chopped3 garlic cloves, minced1/2 cup chopped fresh basil2 T capers, drained4 T red wine vinegar1 T extra virgin olive oil2 T defatted chicken broth1 15 oz can cannellini beans, rinsed and drainedSalt and Pepper12 cups torn mixed salad greens4 Italian plum tomatoes, chopped
Directions
In a large salad bowl, combine the tuna, scallions, garlic, basil, capers, vinegar, oil and broth. Toss to mix. Gently fold in the beans. Season with salt and pepper to tast. (The salad can be refrigerated for up to 4 hours at this point.)

Just before serving, add the greens and the tomatoes to the tuna mixture, toss and serve.
