*Ancient Harvest Traditional Whole Grain Quinoa, 1 serving =.25 cup dry, 1 cup (remove)Chickpeas (garbanzo beans), 2 cup (remove)Scallions, raw, 1 cup, chopped (remove)Parsley, .5 cup (remove)Cider Vinegar, .5 cup (remove)Olive Oil, 2 tbsp (remove)Rosemary, dried, 1 tsp (remove)Thyme, ground, .5 tsp (remove)Oregano, ground, .5 tsp (remove)Garlic, 4 cloves (remove)Black Olives, canned (small-extra large), 25 small (remove)Salt, 1 tsp (remove)Pepper, black, .5 tsp (remove)
Cook quinoa according to package directions and cool completely. Drain and rinse two cans or 2 heaping cups of prepared chick peas. combine peas, scallions and parsley in large mixing bowl. In smal bowl or shaker combine remaining ingredients shake until oil and vinegar emulsifies. Combine all ingredientsin large mixing bowal and add dressing adjust sherbs, salt and pepper to taste. Serve at room temp, but equally good chilled!
