Shrimp Remoulade

Ingredients
4 cups water2 tsp liquid shrimp & crab boil8 ounces unpeeled medium shrimp2 Tablespoons minced green onion1 1/2 Tablespoons plain fat free yogurt1 Tablespoon Creole Mustard1 Tablespoon Light Mayonnaise1 Tablespooon EVOODash Dried TarragonDash salt
Directions
1. Combine water and crab boil in a dutch oven; bring to a boil. Add shrimp; return to a boil, and cook 2 minutes. Remove from heat, and let stand 5 minutes. Drain and rinse with cold water. Peel and chill shrimp.

2. Combine onions and next 6 ingredients in a small bowl. stirring well. Serve sauce with shrimp.
Yield: (1 serving) 6 ounces shrimp and 3 tablespoons sauce
