Lentil salad with raisins

Ingredients
1 c brown lentils2 c water1 t salt1 1/2 t dried thyme2 T olive oil2 T red wine vinegarsalt and freshly ground pepper3 green onions, sliced1 c chopped celery1 c chopped red bell pepper1/3 c finely chopped red onion3 T Italian parsley leaves3 T golden raisins
Directions
Cook lentils with water and thyme in rice cooker or over a low flame until lentils are soft. Mix oil and vinegar and salt and pepper and set aside. In large bowl, combine lentils, celery, green onions, bell pepper, red onion, parsley, and raisins. Add oil-vinegar mixture. Set aside for at least 1 hour before eating. Serve at room temperature.
Makes 6 generous main dish servings.
