Cuban Black Beans

Ingredients
2 (10 ounce) cans black beans or 2 cups cooked black beans1 medium onion, chopped1 green pepper, chopped4 cloves garlic, minced1 teaspoon cumin powder1/2 teaspoon oregano1/2 teaspoon salt1 tablespoon red wine vinegar
Directions
1. Fry the onion and pepper in a little oil or water
2. Add the garlic and saute a little.
3. Introduce a little of the bean liquid until all previous ingredients are soft.
4. Add the beans with the remaining liquid.
5. Add spices and simmer about 30 minutes.
6. Add the vinegar just before serving.

    Easy to make from scratch. I forgot to cook my soaked black beans so mixed them in and added a cup of water to simmer while the brown rice cooked. - 5/26/11

    Yummy! I didn't have green pepper or vinegar, so I just left it out. I sauteed the onion in water and added a dash of chili powder and a dash of old bay. AMAZING- would be great for burritos or just plain. I had with a baked potato, too. - 1/18/11
