Summer Squash Quinoa

Ingredients
1 Green Pepper1 clove Garlic1 Summer squash sliced3/4 cup Quinoa1 tbsp Olive Oil
Directions
Rinse Quinoa.
Heat Olive Oil. Saute squash, bell pepper and garlic for about 2 minutes.
Add no-salt seasonings of your choice.
Add Quinoa and water.


Bring to a boil. Cover and cook for about 15 minutes until water is absorbed.
Fluff with fork before serving.

    I found this to be really bland, even when I added a lot of seasonings and lemon, which I thought would be all I needed. Maybe I just need to experiment some more with spicing. - 8/27/09
