Bran Flax Muffins

Ingredients
1.5 cups flour3/4 cup flaxseed meal3/4 cup oat bran1 cup brown sugar2 tsp baking soda1 tsp baking powder1/2 tsp salt2 tsp cinnamon1.5 cups carrots, shredded2 apples, shredded1/2 cup raisins1 cup chopped nuts3/4 cup milk2 eggs, beaten1 tsp vanilla
Directions
Mix together flaxseed meal, flour, oat bran, sugar, soda, powder, salt, and cinnamon in a large bowl. Stir in carrots, apples, raisins, and nuts.

Combine milk, beaten eggs, and vanilla. Pour liquid ingredients into dry ingredients. Stir until moistened.

Fill sprayed or lined muffin cups 3/4 full. Bake for 15-20 minutes at 350 degrees.
