Chicken and Black Bean Rice

Ingredients
1 green bell pepper, chopped1/2 cup onion, chopped1 cup carrots, chopped1 can diced tomatoes with green chilles undrained15 oz black beans drained1 box yellow rice1 pound chicken breast
Directions
Coat pan with 1 tablespoon olive oil.
Cut chicken in cubes and cook.
Saute onions, carrots, and peppers until tender.
Cook yellow rice according to directions on package.
Combine all above ingredients as well as beans, yellow rice, diced tomatoes, and 1 and 1/2 cup cheese. Mix together and place into lightly greased 13x9" baking dish.
Top with remaining half cup cheese.
Bake at 350 degrees covered for 30 minutes.
Remove cover and back an additional 10 minutes until cheese on top is melted.
