2.5 oz Shady Brook Farms Breakfast Sausage1/2 cup sliced green onions1 cup fresh spinach, chopped1 serving leftover A-L's Modified Curried Red Lentils with Brown Rice (I used regular lentils as I couldn't find red...) about 1 cup1/4 tsp cayenne pepper (optional)2 eggs
Before starting, chop spinach and slice green onions. Have ingredients ready and waiting--this cooks up fast!
Heat skillet over medium heat. Brown sausage. Add green onions and spinach until slightly cooked, then add lentils & brown rice, and cayenne. Allow to heat through for a couple of minutes, then break two eggs over mixture. Break yolks, mix together gently and wait until egg is thoroughly cooked. Enjoy!
