1 medium cucumber1 (12-ounce) bag broccoli coleslaw2 tablespoons finely chopped mint leaves3/4 cup yogurt [plain low fat]1/4 cup honey2 tablespoons apple cider vinegar
Grate cucumber into a large bowl. Add broccoli slaw and mint. Toss to combine and set aside.
In a small bowl, whisk together yogurt, honey, and apple cider vinegar. Pour over slaw. Toss to mix thoroughly.

This is a good, refreshing recipe. I like mint so added a little extra. To keep it from being watery, pat the cucumber with paper towels after shredding. - 10/18/10

Thank you. I had forgotten this recipe. I have a lot of plain yogurt that I just made. I will have to make this again.
