32 ounces Hurst's dry beans8 ounces Cumberland Gap ham cubes, large pieces cut up3 tablespoons instant chopped onions1/8 teaspoon pepperDash salt2 cups chicken brothWater (enough to cover beans)
Wash dry beans under cold water to remove any debris before using (instruction on bag of beans).
After washing beans, add water, chicken broth, ham cubes, onion, and seasonings in large pot. Cover, bring to boil, then simmer 2 or 3 hours or until tender and liquid is well thickened.
Makes approximately 13 1-cup servings
Serving suggestion - pour mixture over 1 serving of Quick Corn Bread (another recipe of mine).
