Spinach and Tomato Scones

1/2 c fresh spinach (not frozen or cooked)1/2 c roughly chopped tomatoes1 tbsp oil1/2 c self-raising flour (or white flour with 1 tsp baking powder, 1 tsp baking soda, and 1/4 tsp salt)1/2 c whole wheat flour1/2 c soy milk
1. Preheat your oven to 200 degrees C and put baking paper on a cookie sheet.
2. Combine the two flours. Then add the soy milk and oil.
3. Roughly chop your spinach and tomatoes, and mix them into the flour and soy milk.
4. Form 12 mounds on the sheet and bake for about 15 minutes, or until the centres are cooked.
Makes 12. Also, it's nice if you sprinkle sunflower seeds on the tops before baking (not included in nutritional info).
