Ingredients
1 pint waterCouscous, 110 grams (remove)Cucumber (with peel), 0.5 cucumber (8-1/4") (remove)Red Ripe Tomatoes, 2 medium whole (2-3/5" dia) (remove)*Lemon Juice, 1 lemon yields (remove)Olive Oil, 1 tbsp (remove)small bunch of parsley and mint
Directions
soak the couscous in the water for 30mins the drain well, finely dice the cucumber and tomatoes and add with the lemon juice and season with black peppeset aside for 30mins then add herbs ,oil and toss
serves 2
can be kept in the fridge for 3 days
