banana stuffed french toast

1 banana, sliced2 T. neufchatel1 T. pwd sugar1 t. lemon zest2 pinches nutmeg8 slices thin whole wheat cinnamon raisin bread1 C. milk1 egg1 egg, white3/4 t. vanilla
Mash 2 T. of the banana in a bowl. Add the neufchatel, sugar, lemon zest and nutmeg.
Spread 4 slices of the bread with the filling mixture. Top with banana slices and the other 4 slices of bread. Mix the milk with the eggs, and vanilla. Dip the sandwiches into the egg mixture, turning to coat. Fry in nonstick pan or with cooking spray until golden brown. Serve with sugar free pancake syrup or powdered sugar dusted on. Also good with sugar free fruit spread.
