Chicken Paprikash

Ingredients
Pam2 c mushrooms1 small onion1 small red pepper, diced1 tsp paprika3/4 tsp salt1/2 tsp black pepper1/2 c canned chicken broth12 oz boneless skinless raw chicken breast1/2 c reduced fat sour cream
Directions
Coat nonstick skillet with cooking spray and heat. Add mushrooms, onion, garlic and red bell pepper; saute 5 minutes. Stir in paprika, salt and pepper. Add broth.

Dice raw chicken and add to vegetable mix. Cover and simmer until chicken is no longer pink. Stir in sour cream. Cover and cook on low until mixture is thick and hot, about 10 minutes. Serve over hot rice. Yeilds 6 1 cup servings.
