RAW mock potato salad

Ingredients
1 medium jicama,cubed2/3 medium avocado cubed2-3 fresh sprigs dill1/2 yellow bell pepper, finely diced
Directions
take off jicama skin and cube jicama to desired sized pieces. skin and cube avocado as well. take stem off dill(throw away or feed to rabbit) and mince dill. cut bell pepper into thin strips,than mince finely chop the strips. put all ingredients in bowl, mix with a spoon or your hand. enjoy.
corn is also good in this. as well as lemon juice for extra flavor
makes 4 3/4 cup servings.

    I loved this recipe! I added a few more ingredients to mine. Instead of a yellow bell pepper I used a red and then I added celery, couple slices of chopped purple onion, sea salt and cayenne. I also made an almond mayonnaise for a dressing! - 4/22/11
