Chicken Tortilla Soup

Ingredients
4 cups low sodium chicken broth2 cups water1 whole chicken breast (boneless and skinless)1 medium onion chopped1 small can chopped green chilis1 can Rotel tomatoes and green chilis diced1 teaspoon ground cumin1 clove garlic chopped2 tablespoon chopped cilantro leaves1/2 cup brown rice3 corn torillas cut in wedgesToppings:1 cup 2% grated cheeseFat free sour creamSliced green onionsSliced AvacadoLime juiceToasted tortilla strips
Directions
Place all ingredients in a slow cooker or pressure cooker and cook until chicken is tender and will shread.

Brush remaining 3 corn tortillas with oil and slice into 1/4" strips. Separate strips and place on cookie sheet. Bake in 400 oven until brown.

Serve with a sliceof lime, toasted tortilla strips, sliced green onions, a dolop of sour cream, slices of fresh avacado.
