1 Chicken Breast1 TBS Olive Oil1 Celery Stalk3 TBS mayonnaiseFresh Parsleysalt & pepper
Heat olive oil in a pan. Cut chicken breast into 2 fillets for faster cooking. Add chicken to pan, with salt & pepper. Cook until no pink is in the center. Remove from pan until cool enough to chop into cubes. Chop 1-2 stalks of celery, roughly chop parsley. Mix celery, parsley, and chicken with mayo, add more pepper if desired. Stick in refrigerator or serve warm.
Serves 4. Use as sandwich filling or serve on top of lettuce for a low-carb option.
