Pan Fired Okra

  • Number of Servings: 6
Ingredients
1 or 2 eggs2-3 cups of frozen okra sliced1/4 cup of cornmeal or cornbread mix2 tbsp of cooking oil
Directions
In a skillet cook Okra in oil with hint of pepper. Slowly heat through and lightly color it with the oil. Takes about 10 minutes usually.

Add in egg and corn meal. Mix thoroughly. Stir lightly to cook the cornmeal and egg leaving slightly fried batter on the okra.

Serve immediately.

Makes about 6 1/2 cup portions depending on starting amount of okra.
