Cilantro Lime Tilapia

1/2 cup red or sweet onion, minced (or 2 shallots)4 garlic cloves, pressed or minced2 T fresh cilantro, chopped2 T (6 tsp) Splenda1/4 c. lime juice2 T red wine vinegar1 T olive oil1 tsp salt1 tsp ground black pepper4 4 oz portions tilapia
Makes 4 4-oz servings
Combine onions, garlic, cilantro, splenda, olive oil, vinegar, lime juice, salt and pepper in gallon-sized resealable bag; shake to combine. Add the tilapia and refrigerate for 2 - 4 hours, turning every 30 minutes.
Preheat oven to 450 degrees. Line a baking sheet with aluminum foil and spray with cooking spray.
Place fish on prepared foil, discard marinade. Bake about 10 minutes or until fish flakes easily with a fork.
*Can also grill in a grilling basket or in foil pouch over med-high heat for about 10 minutes.
