2 cups fat-free, low soduim chicken broth1 tablespoon olive oil11/2 teaspoon Ground cinnamon1 teaspoon ground cumin3/4 teaspoon ground ginger3/4 teaspoon ground cumin3/4 teaspoon turmeric1/2 teaspoon of salt1 cup quick cooking whole wheat couscousBlack pepper to tasteZest and juice of one small lemon1 can (15.5) chickpeas-rinsed, drained and patted dry4 green onions-thinly sliced1 carrot - roughly grated1 red pepper-chopped1/2 cup raisins1/3 cup walnuts1/4 cup parsley-chopped1 lb cooked skinless chicken breast- sliced2.5 cups of lettuce greens
1.Bring the chicken broth, olive oil, and spices to a boil in medium saucepan. Stir in couscous, lower heat and cook gently for about 5 minutes-until all the liquid is absorbed. Remove pot from heat, cover and let sit 5 minutes.
2. Arrange salad greens on large serving plate and put couscous over greens and season to taste with salt and pepper. Add the remaining ingredients and top with chicken. Serve immediately.
