Red Lentil Dal with Spinach

3 cups water1 cup red lentils(masoor dal)1 onion, chopped4 tsp ginger, finely minced4 tsp garlic, finely minced1/2 sweet potato, chopped*1 plum tomato, chopped2 tsp tumeric3 tsp garam masala1 bay leaf2 tsp salt1 package frozen spinach1 tbsp butter
Makes approximately 7 1-cup servings.
Rinse lentils. Bring water to boil and add all ingredients except spinach and butter. Boil gently, stirring regularly(about every ten minutes) so that the lentils don't stick to the bottom and burn. After about 30 minutes, add the spinach(I don't even bother to thaw it). Then boil another twenty minutes, or until thickened. Remove from the heat and stir in the butter until it melts. Serve over rice.
* I used the sweet potato this time, but don't actually recommend it -- I think it made it too sweet. Any vegetable can be easily added.
