Zesty Rainbow Salad

Ingredients
CornBlack BeansAvocadoTomatoOrange PepperSalsaSpices - cumin, chili powder, chipotle powder, pepper
Directions
Salad:
Dice tomatoes, orange peppers, and avocados
Add corn (fresh or canned) and black beans

Add a tablespoon of salsa and your favourite Mexican spices (eg. cumin, chipotle powder, chili powder, hot chillies, black pepper, etc.), and hot sauce if desired

You can make all sorts of substitutions, especially with the bean choice. You might like to add green, white, or red onions for flavour, along with garlic. (I can't eat these!)

This can be eaten on it's own, or on tortillas, or as a dip with nacho chips. It's great for a picnic.
