Crockpot Apple and Raisin Breakfast Rice

Ingredients
1 cup long-grain brown rice1 cup unsweetened apple juice1 cup water1 medium apple chopped1/2 cup raisins1/2 tsp ground cinnamon1/4 tsp ground nutmeg
Directions
Combine all ingredients in a slow cooker and cook on low for 8 to 10 hours.

Best topped with 1/2 cup Vanilla flavored soy milk (not included in nutritional information).

Yield: 6 cups.
