Caramel Glass Tuile

Ingredients
310 g Butter310 g 10x sugar 85 g corn syrup or glucose syrup170 g bread flour
Directions
melt butter, corn syrup and sugar in sauce pan over medium flame.

Add flour all at once and stir until well combined, cook briefly, just bringing the mixture to a boil and remove from heat.

Let batter cool.

Spoon tablespoon sized circles onto silpat lined sheet pan,

cook at 375 F until GBD, remove from over, cool slightly and shape over cup, roll into cigarette, or shape into cones, fans, or rosettes.
