Mini Quiche Bites

9" Pie crust either refrigerated or frozen, thawed5 Eggs1 cup Heavy Whipping Cream1/2 cup Swiss Cheese, shredded6.5 tbsp Bacon Bits1 cup Fresh Spinach, chiffonade
1. Roll pie crust out as thin as possible, without becoming too thin or tearing.
2. Cut into as many 2" circles as possible (should get around 20). Form into mini muffin pan.
3. Beat together eggs and heavy cream.
4. Place 1 tsp each, cheese, bacon bits and spinach into each cup.
5. Pour egg mixture over filling. About 2 tsp.
6. Bake at 400F for about 15-20 minutes. Until "puffed" and golden.
