Chicken Paprikash with Mushrooms

Ingredients
3 - 5 oz boneless, skinless chicken breasts1 medium onion, sliced lengthwise1 Tbsp Smart Balance Buttery Spread2 C mushrooms2 - 3 Tbsp Paprika (not hot)1-2 tsp Kosher Salt8 oz Light Sour Cream
Directions
Melt buttery spread in skillet over medium heat. Add onions. Sautee until soft. Add mushrooms. Cook until partially soft. Add paprika and salt; stir to incorporate into the mixture. Add chicken. Stir to coat. Cover skillet with tight fitting lid, reduce heat to medium low, and cook for 30 minutes. Remove solids from skillet to a serving platter. Add sour cream to pan juices and heat but do not bring to a boil. Pour over plated chicken and vegetables. Serve over brown rice or noodles.
