1 lb. of imitation crab meat,diced1 cucumber seeded and diced in squares1/2 of a medium onion, diced2 medium tomatoes, seeded and diced3 Tbls finely diced cilantro (or to your taste)Salt to your tasteJuice of one lime1 small can of V-8 Vegetable juice

Put all ingredients in a medium size bowl and stir together. This is best if it is refrigerated for a while so the flavors can marry. The neighbors serve it to us on a crisp corn tortilla, but we have also eaten it on a bed of fresh spinach which makes it less fattening and still tastes quite good.
