Mung Bean Curry

Canned Tomatoes, 1 can Curry powder, 2 tbsp Garlic, 4 clove Ginger Root, 4 tbsp*Mung beans, cooked 4 cup Coriander raw, 1 cup*Tumeric, 4 tsp *cardamon, 2 tsp *Spinach, cooked, 1 cupTomato Fresh Chopped 1 large whole (3" dia)
Soak Mung Beans Overnight.
Put in pot, cover with water.
High temperature until boiling then reduce to lowest level.
Slow cooking is best for mung beans.
In another pot, fry garlic, spices, oil, then add can tomatoes, then add cooked mung beans.
Serve with spinach, raw tomato and chutney
