Spinach Mushroom Omelet

Ingredients
2 large eggs2 medium mushrooms1/2 cup fresh spinach2 oz. fresh mozzarella cheese1 tbsp olive oil
Directions
Heat the olive oil in a small skillet. Saute the mushrooms and spinach for just a minute to soften. Beat the eggs until smooth and lemon colored. Crumble the cheese intol small chunks. Add the cheese and the eggs to the spinach and mushrooms. Cook until the egg is done. Season to taste.
