Ingredients
-1 Large Fresh eggplant, peeled and diced- 16 Oz Dried Kidney Beans soaked over night-Large Diced Tomatoes (28 Oz Can)- 2 Tsp Liquid Smoke (Optional) -Chili powder, 5 tbsp -Cumin seed, 3 tbsp -Cayenne Pepper- 1 tbsp -Diced Green Peppers (bell peppers), 1 cup- Tabasco Sauce, 3 tsp
Directions
Throw all the ingredients in a crockpot and cook on low for 8-12 hours,
