Spicy Stuffed Bell Peppers

Ingredients
2 lbs Ground Beef2 large cans stewed tomatoes, coarsely chopped (save juice)2 c Long Grain White Rice (raw)4 Lg Eggs (raw)1 Lg Yellow Onion, diced1/3 c diced Jalapeno Pepperssalt, pepper to taste4 large Green Bell Peppers, halved and seeded
Directions
Drain the tomatoes into a large dutch oven. Then, mix the remaining ingredients, except the Bell Peppers. Stuff each pepper with the beef mixture (they will be overflowing) and place carefully into the tomato juice in the dutch oven (meat side up). Cover and bring to a boil. Reduce heat and simmer until done.

    I too have always baked my stuffed peppers. Because of the summer weather, I think I will try them this way. I did have to omit the Jalapeno Peppers as my own personal preference. - 7/17/09
