Ingredients
1 large egg1/3 cups all purpose flour2/3 cups whole wheat flour3/4 cup 2% milk1 tbs brown sugar (packed)2 tbs vegetable oil3 tsp baking powder1/4 tsp salt
Directions
spray skillet with non-stick spray, over medium heat. Beat egg into all the ingredients until smooth. For each pancake pour slightly less than 1/4 cup of batter to make a pancake. Cook until golden brown on both sides.

    Having read others comments, I made the following changes/additions: added cinnamon & ginger for some flavour; used a 50/50 mix of kefir & applesauce instead of milk and added a tsp of soda to make them fluffier. These were very, very good ... made a double batch and we finished them off! Yum! - 5/11/10

    Great way to start the day. These pancakes are light and fluffy. I added blueberries and used 0 fat yogurt instead of milk with a bit of water to thin it out. They turned out wonderful. These are also great reheated in the microwave. - 1/18/09

    This recipe was a little thick at first. I added some extra milk and a little oil to change the consistency. The blueberries were definitely a yummy addition!!! - 7/4/07

    WOW! Great recipe. Very substantial pancakes, not wimpy like other mixes, IMO. I made a few changes. I used 3T milled Flax seed to replace 1T oil, and I used skim milk. So filling, and tasty & fast. This is going in my recipe box. Thanks for sharing the recipe. - 6/26/07
