Applesauce Oatmeal Muffins

1-1/2 Cups Oats (quick or old fashioned, uncooked)1-1/4 cups all-purpose flour1/2 cup firmly packed brown sugar1 teaspoon ground cinnamon1 teaspoon baking powder3/4 teaspoon baking soda1 cup unsweetened applesauce1/2 cup nonfat milk3 tablespoons oil1 large egg white
Makes 20 muffins.
Heat oven to 400. Lightly grease bottoms only of muffin pan (or use baking cups). Combine dry ingredients; mix well. In separate bowl, combine applesauce, milk, oil and egg white. Add to dry ingredients and mix until JUST moistened (or they get tough, as with all muffins). Fill muffins cups evenly. Bake 14 to 16 minutes or until deep golden brown. Let stand a few minutes, remove from pan and serve warm.
