Light(er) Funeral Potatoes

7-8 cups cooked fresh potatoes OR 32oz package southern style diced hash browns1 can (10.75oz) Campbell's Healthy Request Cream of Chicken Soup1 cup nonfat milk1cup reduced fat sour cream1 cup sharp cheddar cheese, grated (I use a mexican cheese blend)1 TBS dried onion flakes or .25 cup grated sauted onion (optional)salt and pepper to taste3TBS butter, melted(optional).75 cup corn flake crumbs (optional)
Cook fresh potatoes or thaw frozen potatoes. Place potatoes in a 2-3 quart casserole dish or a 9x13 cake pan.
Combine soup, milk, sour cream, cheese, and onion and salt and pepper to taste. If a saucier dish is desired add 2-3 Tbls additional milk. Mix well. Spread over potatoes.
If desired, melt butter and combine with corn flake crumb. Sprinkle crumbs over casserole. Bake uncovered at 350 degrees F for 30-45 minutes or until hot and bubbly throughout.
