easy vegetable soup (10 serves approx 250ml)

Ingredients
1 litre chicken stock, plus 250ml cold water150g carrots, chopped120g celery, sliced2 x 400g tins of diced or crushed tomatoes, if unavailable just chop up tins of whole tomatoes400g tin of chickpeas, drained and rinsed1 x large red pepper dicedtablespoon mixed herbs - optional, just use your favourites1 x medium onion chopped into small pieces2 x heaped teaspoonfulls minced garlic
Directions
Chop all vegetables to whatever size you like. Spray the inside of large saucepan with cooking spray and cook onion till soft, but not browned. Add all other ingredients at the same time, bring to the boil, then simmer for about 45 minutes. Serve hot, with or without bread. If using herbs, add them with the other ingredients at the beginning of cooking. Enjoy.
