Ruthie's Imitation crab stuffed portabella cap

Ingredients
Ocean cafe deluxe crab flavored seafood, 0.5 cup Better Than Cream Cheese (non-hydrogenated) [Tofutti], 2 tbsp Light salad dressing, 1 tbsp 1 Portabella mushroom cap, 3 oz
Directions
Makes 1 serving
Prepare the musroom cap by removing stem and washing cap. Set aside.
Place the 1/2 cup imitation crab in a bowl. WIth a fork mash it until it is shredded.
Add the 2 TBL of tofutti imitation cream cheese and the 1 TBL of light salad dressing and mix until it is blended well.
Turn the mushroom cap to the underside and spread the crab mixture on the mushroom cap.
Place on a cookie sheet lined with foil and sprayed with cooking spray.
Bake 30 minutes at 350 - or until heated through. DO not let mushroom cap get overcooked.

    Hi Ruthie, seems to be an easy to make nutritious and yummy recipe. Will try it out though in India we don't get the portabella mushrooms will substitute the normal ones. Thank you. - 12/17/09
