Roasted Red Pepper Hummus

2 cans Chick peas, drained (reserve 1/4 cup liquid) 1 8 oz jar roasted red peppers, drained3 or 4 cloves garlic3 T. tahini1 T. olive oil6 T. lemon juice (usually about 2 lemons)1tsp. ground cumin1tsp ground corriander1tsp salt1 tsp pepper
Drain the chick peas, reserving 1/4 cup of the liquid. Drain roasted red peppers, place peas, peppers, and all remaining ingredients in food processor or blender. Pulse until all mixed, and smooth consistancy.
This is better if made the night before you plan to eat it to let the flavors blend.
Serve with celery and carrot sticks, and pita wedges.
Serving size is 1/4 cup. Makes about 14 servings.
I use this as a sandwich spread on pita and add romaine, tomato, red onion, cucumbers and feta cheese.
