1lb ground beef1 med onion chopped1 large carrot chopped1 tsp minced garlic (2 cloves)2 celery stalks chopped1 can red kidney beans1 can chickpeas1 lg can diced tomatoes1 tbsp chili powder2 cups cooked rice (or 1 cup instant rice) (optional)
in large pot fry ground beef, onion, garlic and celery until beef is browned. Add remaining ingredients except for rice. Add rice about 10 mins before you want to serve. (note: If using regular rice and you don't want to cook your rice in advance, add the rice as soon as you add the tomatoes. it should have enough time to cook, leave it longer if necessary. Chili just gets tastier the longer it cooks anyway.)
